Joyce Kay's Favorite Molasses Cake

Molasses Cake
1/4 Lbs. Butter
1-1/2 c. Sugar
1 c. Dark Molasses
1 tsp. Cinnamon
1 tsp. Ginger
1 tsp. Cloves
2 tsp. Baking soda (Not Arm & Hammer)
1 c. Boiling water to be used to dissolve baking soda
2-1/2 c. Gold Medal Flour
2 Eggs at room temp.
1 c. of brewed coffee
1/4 Lbs. Butter

2 Eggs at room temp.
1 c. of brewed coffee
1/2 c. of Powdered Sugar
1 Can. of Cake frosting
Cream butter and sugar: add molasses and spices. Dissolve soda in 1 c. of boiling water; stir into creamed mixture. Stir in flour; add eggs, blending well. Lastly, add brewed coffee to cake batter. Spoon batter into greased cake pan. Bake 350 degrees for about 30 mins.

Once cake is throughly cooled, sprinkle with powdered sugar if desired. Or top with favorite white frosting, or mocha flavored frosting
